Treat yourself with this Greek shrimp recipe

Shrimps Saganaki

Garídes saganáki

A Saganaki is a two-handled oven proof pan used to, cook and serve Greek style Mezze in.

Shrimps 2-4 per person

60 ml   olive oil

1          small onion, finely chopped

1          green wax pepper, finely chopped

5g        fresh oregano, roughly chopped

5g        fresh basil, roughly chopped

2          garlic cloves, finely chopped

½         Dutch chili, finely chopped

250ml  Fresh tomato mixed in a blender

100ml  shellfish stock, reduced and tasty

2cl       ouzo

50g      feta cheese

Sauté without colour the onion, pepper, chili oregano & basil in the olive oil until the onion is translucent.

Add the tomato and shellfish stock and reduce slowly to a good saucy consistency.

Season to taste and flavour with ouzo. Prepare the saganaki with a generous amount of sauce.

Peel and devein the shrimps, season and arrange them on the sauce sprinkle with the crumbled feta cheese and bake for 4 minutes in a moderate oven

Serve and dream yourself back to Greece.
