Classic Danish smørrebrød “open Danish sandwich”

Open Sandwiches are traditionally part of the Danish food culture many of them have a story behind them or are representative of their place of origin; Sol over Gudhjem is no exemption from this norm: The name literally translates to “the sun over gods home”.

Gudhjem is a small town on the east coast of Bornholm a small Danish island in the Baltic approx., 50*30 kilometres.

Fishing in the Baltic is the major primary industry,  this Bornholm and herring sandwich, is a part of this heritage.

Danish smørrebrød are traditionally served as small meals or snacks.


Sol over Gudhjem, smørrebrød

ingredients

Rye bread, good quality, thinly sliced

Butter

Chives, finely sliced

Red onions, finely sliced in rings

Radish cut in juillienne

Egg yolk

Smoked herring

Salad

Fillet and clean the gut area of the herring, taking care to keep the herring fillets as whole as possible, remove visible bones. Leave the tail on and keep the skin intact.

Butter the bread making sure that whole of the bread is spread evenly with butter, sprinkle generously with chives.

Place on the smoked herrings garnish with some salad leaves radishes and chives.

Arrange the onion and egg yolk as preferred.

Serve with a knife and fork. Tip the egg yolk over the fish.

Adjust the size of the sandwich and the volume of the ingredients after the meal alternative.

I recently took part in a great fun weekend on the Danish Island Bornholm, Bornholm is about 50 * 30 km and lies 1,5 hours by catamaran ferry from the Swedish port of Ystad.
I was working with my friend Bobo in the the Electrolux food truck, I got called in late as expectations and volumes of guests expected at the Gudshjem food festival increased.
We were right in the middle of the food festival:
Sol over Gudhjem - kokkekonkurrence : the danish chef of the year competition, congratulations to the 2015 winner Morten Falk from Kadeau restaurant.

Gudhjem

Gudhjem lies on the east coast of Bornholm with its 500 yearly inhabitants is a small town with typical Danish-Scandinavain design. impressed were we by the picturesque quaintness of the local area Bornholm is a fantastic tourist destination, its a little of the beaten track but well worth a visit.

A great weather vane at the local what more emphasises the heritage of a fishing village.

Gudshjem food festival.

This is the Electrolux food truck featuring home appliances including their new steam oven and vacuum machine for home use, it worked fantastically. We served Bobo's Eueobean cuisine, cross over European/Caribbean food, it was much appreciated by the festival punters.

The line went on forever it kept going until the food ran out. We didn't get a chance to look at the cooking competition or enjoy Gudhjem's big day out. We had approximately 1000 guests, we didn't bother to count.
