This is what the pitch looks like for the opening match at Stockholm's new national football arena "Friends Arena"
55000 spectators, Sweden-England, sold out.
A dream result for Sweden coming back from being down and winning 4-2. Also the scene of one of Ibrahamavic's  absolute iconic dream goals.
We'll be busy in the kitchen, too busy to watch the match.

We've especially imported Loch Fyne salmon to feature throughout the different menu's. Not really English, but Scottish is almost close enough.

Sweden-Argentina

The part of the night we never saw. Lots of snow on the outside nice and warm with a hint of spring on the inside, not bad for the middle of our Nordic winter.

Head chef Krister making a few mental notes and going through the challenges before the Argentina Sweden match, the wall represents the individual group orders in our VIP lodges.

50000 saw Sweden get a lesson in ball control and the benefits of ball possession. The match ended up 3-2 to Argentina with Sweden hardly getting a look in.
We had a big night in the kitchen, a great team effort, we experimented with a new hot dog 6000 in total, we also tried hamburgers for the first time, 2500 hamburgers served from only 6 of our 40 kiosks, if and when our kiosks are rebuilt for hamburger service the'll be flying out the door.
We also tried a quick fix tex mex- hopefully it can turn into a premium taqueria bar.
The Argentinian food featured through out some of our outlets was a big success.

We're looking forward to our next match against the Irish, oysters and Guinness on the menu.

Today 7 April 2013 is the first home match of AIK in their new Friends arena, I just read in the paper 44000+ sold tickets I'm sure everyone is over the moon with those ticket sales.
I personally hope it turns into a fantastic family day out: the away team today is Syrianska from Södertälje, I wouldn't imagine they've played before so many spectators either.
We'll be busy today as normal on event days, trying to make our fast food outlets more effective, we are putting lots of focus on our kiosks, making them more effective and user friendly.
Our Carlsberg bar as well as the adjoining bistro 1847 will be busy, Its generally packed from opening time,  a good tip is that they take table reservations, so if you are out in good time there's always a chance to get into the bar and restaurant early.
The Carlsberg bar opens for general lunch service now om Monday, a traditional Swedish lunch offering will be on offer, every week day.

Here come the Irish

Sweden-Ireland

Friday the 22 March we hosted the Sweden - Ireland world cup qualifying match,
The arena was sold out again, 55000 showing what a fantastic venue it is even with its controversial close able roof.
"The Irish wanted to play with the roof open, I think they only wanted to make it uncomfortable for the spectators"
Being able to host such large scale events when we're still in the grip of a drawn out winter shows what a great investment friends arena is.
I didn't see much of the match, a few minutes only, great atmosphere, the swedes were very disappointed that it was only 0-0 and you could feel it in the air even before half time.
We had a big day in the kitchen, we specially imported some Irish produce to flavour up the menus, we try and incorporate some of the away teams food in the menus with each match for Ireland we imported fresh crab meat from Carrs seafood, Galloway oysters from Kelly's, Tullmore dew flavoured smoked salmon from Burrens smokehouse, Irish beef & lamb through our local suppliers Dafgård, cheese from Sheridans cheesemongers, a big thank you to you all, as well as to Bord Bia who helped co-ordinate the deliveries together with Leröy.
We had about 4000 sit down dinners and another 4000 fast food meals where the kitchen was directly involved in the production and delivery of the meals. About 48 chefs in place on the day.
For each major event the structure and logistical challenges are clearer we are putting more and more effort into transport and delivery around the stadium, it's a huge stadium with lots of individual F&B outlets each with their own special needs.
We've had to find an alternative oyster presentation that reflects Ireland, a lightly poached oyster on a little horseradish creme fraiche with leek julienne, Guinness sauce and fresh seaweed, it will be interesting to see what the Irish think.
The other option is 4000 raw oysters on the buffet, that's tough we'll have to open them any way but by poaching them we'll be able to do it in advance.
During the Sweden Ireland match we had a visit from Michael Moran, the Irish, European and world oyster opening champion. Michael was going to help us open 3000 Galway oysters in our banquet room on theVIP buffet.
Michael is from Moran's Oyster Cottage a 300 year old family run oyster and seafood restaurant in Kilcolgan, Galway on Ireland's west coast.
What a guy, "hey Michael we need to open 800 oysters for the buffet - oh only 800 I can stand there and open them a la minute"
Us normal cooks and chefs carry around a bulging knife roll with all sorts of newfangled knives and equipment, Michael has the bulging roll filled with oyster knives similar to stilettos, daggers, and street fighting weapon's he must of been at least four times faster than any of us, all the time talking and entertaining us, we were all concentration and focus on the task in front of us and all the while trying not to slice into our hands, Michael didn't even work up a sweat.

Michael is such a nice guy I bet he would never admit to pacing himself so we didn't feel so bad.

Friends Arena in Stockholm celebrating st Patrick's day in all of its green splendour, a bit of a marketing coup together with enterprise Ireland but I must admit it did look pretty impressive against our icy spring back drop.

Faroe Islands-Sweden

12 October 2012

A big crowd, about 25000 people watched the match, 2-0 to Sweden I suppose a win is a win but I think many were disappointed.
Not a lot to report from the kitchen, it was hard to find information about traditional Faroe Island food, for important matches we usually feature traditional food from the visiting team. Whale and dolphin wouldn't be ethically accepted here in Sweden, and I'm pleased for that as well.
On the buffets we featured Scandinavian food such as shrimps and mussels, cod, rye and wholemeal breads, hard cheeses, lamb and sheep, horseradish & dill. we filled out the buffet and menus with seasonal local produce. Only about 1000 guests ate a served meal, the numbers were a bit disappointing but a good time was had by all.

Man United at Friends

The big time, big match tomorrow.

Manchester United are finishing off their preseason tour with a match in Stockholm. Home team AIK will face of against Manchester United at Friends Arena. As Swedish teams don't often make it to the champions league ect. its not often we get a visit from the bigger European teams so it should be an entertaining match. Not a lot happening from our side in the kitchen for the match, but we're busy preparing for our hotel opening in a few weeks, it will be a whole new ball game with daily routines revolving around breakfast, conferences and our restaurants. I think Man United had more supporters than AIK.

Sweden-Austria

Another important qualifier.

Before the big match, this Friday 11th October 2012

A deciding match for both sides, a win is extremely important for advancement to footballs World Cop in Brasil next year, we Australia have already qualified weather or not we can match it with Europe best second placed teams is only a matter of discussion and time.
We in the kitchen won't get to see much of the game. Friends Arena is sold out about 55000 spectators, all Arena restaurants are fully booked, our newly opened Hotel and all the restaurants are fully booked. We'll have about 60 cooks in for the day and we're looking to serve around 5000 three course and buffet meals, and about 20000 hot fast food units.
We're still looking for chefs if anyone is available, competent tradesmen and women that can stand the pressure.
I lived and worked in Vienna for a couple of years during the eighties it's a long time ago, Vienna is a great city with lots of fond memories.

Sweden-Germany

4-2 big win

The next big match, only a few days after Sweden won 2-1 over Austria.
What an atmosphere, I managed to see the last three seconds of the match the whole arena erupted, Sweden with that win moved into the play off round "best of the second places" to qualify for Brasil world cup next year.

On Tuesday 14 November 2012 ,we are hosting Sweden - Germany with only pride as motivation, it should be a great game, The arena is sold out again with over 50000 spectators.

We'll be preparing 6000 plated and buffet meals, all thirteen kitchens are open, all restaurants and banqueting rooms are fully booked, we took a bit of a battering during the Austria match so we'll be looking for a bit of revenge on Tuesday.

We've chosen the busiest night ever to try out "new Arena Food" a concept idea promoting local produce and healthier food alternatives to hot dogs and hamburger, it will be interesting to see how the concept pans out, we'll be preparing 1000 special boxes. Our "away team menu's" will be featured again this match with some traditional German food, one sweet that is as much liked in Sweden as in Germany as well as the rest of the world is the schwarzwald torte, if its half as good as last weeks Sacher I'll need to jog two laps around my little track next weekend.
