What to do with fresh horseradish leftovers

Big banquets and wrong recipes often lead to leftovers in big kitchens, one such place I was working had 15kg of fresh horseradish leftover at the end of the banqueting season & so what to do with it.

I was charged with the task to do something with it.

So I grated it, don't do it in a small confined room.

250g    grated fresh horseradish

60ml    water

60ml    white wine vinegar

5g        salt

About 15kg of fresh grated horseradish

The mix.

Preparing for a frozen mix.

Mix the grated horseradish to the required consistency in a food processor.

Mix well all ingredients, add more liquid for a wetter mixture.

Store until further use in an airtight container, vacuum bag, freezer.

The finished prepared horseradish.

Packaging

 

Packaging and labelling, other wise it sits in the freezer indefinitely.

Finished packaged horseradish, vacuumed it in small vac bags and frozen for future use.
