Clarion Hotel Luleå, Sweden

Branching out by myself started late 2013 with an interesting temporary assignment to open a Clarion Sign Hotel in Luleå “northern Sweden” the appointed executive chef jumped ship a few weeks before the opening, As I was between jobs the challenge suited me just fine. Two months or so working within Clarions concepts and in a new role was enough for the open your own consultancy idea to flourish and become a reality.

Piteå Havsbad, Piteå, Sweden

Continuing in northern Sweden for another three months, this time in Piteå, at Piteå Havsbad, a large combination of hotel, conference, camping & water adventure park. Revamp the breakfast and conference and dinner offering, modernize the waterpark fast food outlet, create a summer restaurant & a bourbon bar were some of the tasks I was involved with.

Fritidsresor Blue Village

A new opportunity arose which included a concept inspection and introductory tour of some of Fritidsresor Blue Village resorts in turkey and Greece. This was later followed up with Fritidsresor food & beverage congress where I looked after the hands-on group kitchen training as well as being a guest speaker at the congress.

Lasse Maja’s Wärdshus Stockholm, Sweden

I worked at Lase Maja’s Wärdshus and coordinated their traditional Christmas Smörgåsbord an annual event during the month leading up to Christmas, we catered for approximately 7000 guests during this period.

Phuket & Khao Lak, Thailand

Food & beverage support. My first solo trip with Fritidsresor, visiting two large resorts in Thailand at the start of the Scandinavian/Thai tourist season, checking and controlling concept adherence as well as offering interactive tips, training and support to the existing chefs and teams.
